 Miso Soup With Mussels Recipe

It has been known that shellfish release hormones such as testosterone and oestrogen so what better way to get the night started than with this elegant yet simple aphrodisiac crammed soup, here's what you need:
Please note the ingredients I am giving you will be enough to serve around 4 people so there will be plenty left over if you're still hungry, save some room for dessert though!

Ingredients

  • 350g Fresh Mussels (Cleaned)
  • 600ml (1 pint) Water
  • 4-6 tablespoons Shiro Miso Paste
  • 2 Spring onions finely chopped diagonally
  • A sprinkling of shichimi togarashi (Japense 7-spice chilli powder) to garnish the soup

Step 1
Make sure those mussels are clean – no one likes dirty mussels!
To clean your mussels you must first discard any open or broken shells. Dampen a few sheets of kitchen paper with salted water and lay the mussels on it and place in the refrigerator over night, this will make sure that they spit out any sand. Once they have been in the fridge over night you need to wash them in slightly salted water before cooking.

Step 2
Boil um up!
Once your mussels are nice and clean then you need to put them in a saucepan with the water and bring to the boil over a high heat. Turn the heat down once the water begins to boil and cook for a further 5-6 minutes, scooping out any bits that float to the surface.

Step 3
Jeeves, ones mussels are cooked, prepare the miso!
Put the miso paste in a small bowl, add about a ladleful of the mussel stock (the water you just cooked your mussels in) and stir with a fork until you have a runny yogurt-like mixture. Whilst doing this you should heat up your soup dishes in the oven, nobody got time for cold soup dishes. Now add the miso mixture you have just prepared to the saucepan and bring the soup back to just below boiling point (so that its not bubbling) Drop in your spring onions and turn off the heat, make sure that you discard any mussels that remain closed as these will not result in the night ending happily!

Step 4
Serve the soup with a smile
Ladle the soup into your nice warm soup bowls and arrange the mussels so that that  they are the centre piece, garnish with the chilli pepper (garnish according to spice tolerance, you don't want to blow their heads off) and serve, with a smile of course!
