Bonito flakes (aka katsuo bushi) are shavings from dried, smoked skipjack tuna and are a hugely versatile ingredient. They are used in creating dashi stock, work as a topping on everything from okonomiyaki to cold tofu, and make a simple but delicious filling for rice balls (onigiri).
