Bonito flakes come in a range of sizes and this (ito kezuri katsuo - 'ito' meaning string/thread in Japanese) silky, thread-like variety are the thinnest. As with all bonito flakes, once put on top of hot food they start to 'dance', and the fine nature of this type of bonito means it works especially well as a garnish.
