Deconstructed Sushi Salad Recipe

Still trying to lose a few pounds, so you can freely overindulge when xmas comes? We're with you. And guess what? Sushi is one of the best low calorie foods you can nibble on in a guilt free way. It's especially good if you maintain all the great sushi inspired flavours in a salad but cut down on the rice too, so here's a sushi inspired salad that's so delicious, it won't even feel like you're eating a salad...

You Will Need

  • 1 8oz Packet of Firm Tofu
  • Edamame Beans
  • Sushi Ginger
  • Japanese Pickles
  • Yuzu Dressing
  • Soy Sauce
  • Sesame Oil
  • 1 Cup of Cooked Sushi Rice or Quinoa
  • Carrot
  • Avocado
  • Spring Onion
  • Nori Sheets
  • Sesame Seeds
  • Fresh Chili

Recipe

It couldn't be more simple to make this dish. First make the dressing, just mix together 2 Tbsp of Soy Sauce, 1 Tbsp Sesame Oil, 2 Tbsp Yuzu Dressing and 1/2 Tsp of finely chopped fresh chili.

Now marinade 1 inch cubes of tofu in 1 Tbsp soy sauce, 1 tbsp chili and 1 tbsp sesame oil for about half an hour in a ziploc bag. Then fry the tofu without any extra oil until it becomes crisp.

Now construct the salad from the edamame beans, ginger, pickles, sushi rice, carrot, avocado and spring onion. Garnish with toasted sesame seeds. Finish off with warm tofu.
