Teriyaki is a delicious Japanese sauce which is often used as a marinade over meats before the meat is BBQ'd or grilled. Teriyaki sauce makes for great chicken skewers, but it's also nice served over large portobello mushrooms or deep fried tofu.

Method
Making Japanese sauces is quite simple, you just need some patience to allow them to simmer for a while and thicken up.
Place all the sauce ingredients in a saucepan and heat until it starts to simmer. When it does, reduce the heat.
Cook until the sauce reduces to about half.
Remove from the heat. The mixture will thicken further as it cools, but if you're looking for a really thick sauce for BBQing, then add a teaspoon of corn starch at this point and mix in well.
The best way to cook with teriyaki sauce is to let the meat cook and get crispy first, then brush with the teriyaki sauce in the last 10 minutes of cooking, just so it slightly caramelizes on top!
