Boil 50cc of water and 50g of sugar in the pan until it caramelises.
Add the fresh cream into it and heat it for 2-3min on low heat. Add the rest of the sugar, butter and miso. Remove the pan from the hob and add mirin. Pour it on top of the ice cream and add an almond on top.
