How to make Takikomi rice (Japanese mixed rice)

Takikomi rice (Japanese mixed rice)  

If you aren’t a big fan of plain rice, Takikomi rice would be nice for you to try. It is a rice dish flavoured with soy sauce, cooked with chicken and some other vegetables. 

Normally we add seasonal ingredients such as, bamboo shoot (spring), mushroom and chest nuts (autumn) …etc  

Common takikomi rice, chicken, hijki, carrot, shiitake (or similar mushroom) are added. All you have to do is just boil them all together! Easy and tasty! 

You can always change chicken to tuna. 
 

Takikomi rice for 3 to 4 people 

Ingredients: 

360ml of rice (make sure to use sticky rice!) (400ml of water) 

150g of chicken thigh (1/2 tin of tuna) 

1 tbsp of mirin 

2 tbsp of soy sauce 

1 tbsp of sake 

1 tsp of dashi powder 

100g of shiitake mushroom (or any other kinds of mushroom ) 

10g of hijiki 

1/4 carrot 

Fried tofu  

 

Method: 

  1. Cut all the ingredients, cut chicken in to dice, Slice carrots and mashroom, 
     

  1. Put rice, water, and all the condiments (soy sauce, sake, mirin, dashi) and then add all the ingredients ( chicken or tuna, carrots, mushrooms, hijki) on top  
     

  1. Boil them all together, its better if you put the lid while its boiling.
