Hi guys, it’s been a while since I last posted a recipe and with summer on its way (I hope!) *crosses fingers and prays to mother nature for some rays!* I thought what better to do than give you a recipe for Japanese style burgers! So ditch the cheese and ketchup and pick up the takuan and shiitake mushrooms.
All you need is:
First of all heat 1 tbsp of oil in a frying pan and fry the finely chopped onion gently until soft, but not browned. Once soft leave the onions to cool
When your onions have cooled put them in a large bowl along with the minced beef, panko and egg. Season the ingredients with a little salt and pepper and knead well until they are all thoroughly combined and the mixture has become sticky. It is important that the meat is kept soft and juicy for this recipe. Once mixed divide the mixture into four.
Now get ready to get messy! Grease up your hands and take a portion of the mixture, throw it from one hand to the other to get rid of any air, don’t drop it! Then shape the mixture into roughly a 2cm thick burger. Repeat this method with the remaining portions of the mixture.
Heat the remaining oil in a frying pan and add the burgers, fry over a high heat until browned on one side, then turn over so the pink side is up towards you. Place the shiitake mushrooms in the pan next to the burgers, cover the pan and cook over a low heat for 3-4 minutes or until cooked through, stirring the mushrooms occasionally.
Serve the burgers topped with the grated radish and shiitake mushrooms then pour your soy sauce over each burger just before it’s served. You can enjoy this dish with rice or even with homemade chips if you prefer!
