Shirataki Noodles are made of yam cake, which is in turn made from the root of the Konjac (devil's tongue). Shirataki Noodles, also known as Yam Noodles in the west are known for being free from calories, gluten and high on soluble fibers. They feature stongly in the Dukan Diet. They are used in Sukiyaki or any broths, soups or stew. Shirataki noodles have a chewy texture that is quite different to pasta or noodles.
