Shizuoka-kei dark soy sauce is a type of soy sauce that originates from Shizuoka Prefecture, Japan. It is made from a mixture of soybeans, wheat, salt, and water, and is brewed using traditional methods that have been passed down for generations.

A rich, deep flavour and dark colour. It has a slightly sweet taste and a strong umami flavour, making it a popular seasoning in many Japanese dishes, especially in marinades and stews. It is also commonly used as a dipping sauce for sushi, sashimi, and other seafood dishes!

The production process for this dark soy sauce is quite lengthy, and involves multiple steps, including steaming the soybeans and wheat, mixing them with koji (a type of mould), and fermenting the mixture for several months to a year. The resulting liquid is then pressed, filtered, and aged further to produce the final product.
