White Miso, also known as Shiro Miso, is the mildest and lightest type of miso you can buy. There are three grades of miso; white, yellow and red, and the darker the colour, the stronger the flavour. White miso has been fermented for the least time of the three. It's lightly salty and the flavour is not too pungent, making it ideal if you love Japanese flavours but not strong tastes.
White miso is the ideal miso for miso soup. It's light flavour makes for a delicate and refreshing soup, which can be harmonious with the flavours of wakame and spring onions. If you'd like to make miso soup, don't forget to also buy the ingredients for Dashi stock, and perhaps also firm tofu, wakame and spring onions.
To make miso soup, simply combine dashi stock with a tablespoon or so of miso paste, then add your main components such as tofu and vegetables. Miso soup is an excellent breakfast or mid-day pick-me-up. It's hydrating, savory and satisfying, which is great considering miso soup is low calorie and very healthy.
