Soba noodles are made from buckwheat flour which gives them the brown colour. They are considered to be the healthiest Japanese noodles. In summer, they are served cold on a zaru soba tray and accompanied by a sauce called soba tsuyu. The noodles are dipped into the sauce rather than being put into the sauce. They can also be served hot with a variety of toppings such as fried tofu called abura-age.
