Akasu is the product that turns rice the reddish brown colour you see when you visit real sushi masters in Japan. 

Due to its natural sweetness, sugar has not been used in its production, likewise this natural sweetness makes it a perfect addition to sushi and even makes a great marinade.

Tajima Akasu Japanese Aged Red Vinegar offers a rich, complex, and well-rounded flavour. It has a deep tanginess and a subtle sweetness from the rice. The aging process adds depth and complexity to the vinegar, resulting in a smooth and mellow taste.

It is commonly used as a condiment, dipping sauce, or dressing. It can be drizzled over sushi, sashimi, or salads, used in marinades, or added to soups and stews for a tangy kick. The balanced and robust flavour of the vinegar enhances the taste of various dishes.
