Bonito flakes are one of the two basic ingredients required to make dashi stock at home. The other of which is Kombu seaweed. These are simmered together then strained to create a stock which imparts umami flavour into a dish.
You will need to make a dashi stock if you plan on making dishes like miso soup, Japanese hotpot or ramen.
This 500g bag of bonito flakes is ideal for the regular Japanese cook, if you make dishes like miso soup and ramen regularly, you will find more than enough use for this large bag. The great thing is, dashi stock can also be made in bulk, then you can either store it in the fridge for a limited time in an airtight container, or freeze it in blocks so your dashi stock is ready to go whenever you need it.
These bonito flakes are made from a dried, fermented and smoked skipjack tuna. They can also be used to adorn dishes like takoyaki and okonomiyaki, or more unusually, pizza! They impart a delicate, salty, fishy flavour which you will find deliciously savory and ideal for balancing out flavours in your home cooking.
