Brown sushi rice side hulls and brans are rich in protein, calcium and fibre, and is also great for diabetics, those looking to lose weight and makes a good pre-exercise meal. This is because brown sushi rice has a low glycemic rating - brown sushi rice releases sugar and energy slowly, so there are no sugar peaks and you feel fuller for longer.
To cook brown sushi rice, use a ratio of 2:3 rice to water. Wash the rice and soak it in water for about 2 hours before cooking, then simmer for about 20 minutes, or until all the water has been absorbed.
You can also try mixing your brown sushi rice with quinoa for very healthy low-carb sushi rolls!
