Akasu is the product that turns rice the reddish brown colour you see when you visit real sushi masters in Japan. 

Due to its natural sweetness, sugar has not been used in its production, likewise this natural sweetness makes it a perfect addition to sushi and even makes a great marinade.

Made from sake kasu, which is the lees left over from sake production, and rice bran. The mixture is allowed to ferment and age for several years, resulting in a rich and complex flavour that is both tart and slightly sweet.

Traditionally used in Japanese cooking for its unique flavour and colour, which is a deep red-brown. It is commonly used to make pickles, dressings, and marinades, and is also a popular ingredient in Japanese hot pot dishes!
