Harusame noodles, Mung bean noodles, glass noodles, cellophane noodles, dried bean curd, Lungkow bean thread the names are endless and all refer to the ultra-thin translucent noodles, or vermicelli, made from the flour of the green mung bean. Glass vermicelli is a very popular ingredient in Thai cooking and is used in a variety of dishes, from spicy beef, pork or seafood salads to baked crab or prawns. Alternatively, it can be flash deep-fried to provide a crispy texture for salads or a unique and modernistic garnish.
Add 100g of noodles to 1L of water and boil for 4 minutes. Place in a sieve and run under the cold tap until cooled. Add to salad, nabe etc.
