Light soy sauce is also known as "usukuchi shoyu" in Japanese. It is particularly popular in the Kansai region of Japan, the lighter color arises from the use of amazake, a sweet liquid made from fermented rice, that is used in its production. This particular one is made in Japan. Used when a less strong flavour or colour is desired in a dish. It is used less often for dips than dark soy.
