Miso soup made from an instant mix just doesn't cut it anymore when you've tried homemade, authentic miso soup. All good miso soup starts with an excellent dashi broth; it's the secret to those mellow tones and the delicious umami. Even though miso soup is about a great balance of flavours, it's actually quite simple to make. It's just requires a little patience. Once you've made your dashi stock, it's just a matter of adding some miso paste, wakame and tofu.
If you like you can also add fresh shiitake mushrooms to your miso soup, and some thinly sliced spring onions, these add freshness to your miso soup. Tofu and mushrooms provide protein, wakame provides iron and miso is full of vitamins and antioxidants. And yet such a healthy soup tastes so delicious!åÊ
