Kokuto is a type of brown sugar that originated from the Okinawa Prefecture in Japan. Unlike regular white sugar, which is made from sugarcane or sugar beets, kokuto is made from the juice of the sugarcane plant. The juice is boiled and then allowed to cool and solidify into blocks.

It has a unique taste and texture compared to other sugars. It has a deep, rich flavour with hints of molasses and caramel, and a slightly grainy texture. It is often used in traditional Okinawan dishes such as desserts, marinades, and sauces.
