A traditional Japanese dessert worth bringing into the modern world. This ogi smooth red bean yokan, made in West Kyushu using the finest ingredients, is a little different from other varieties of yokan in that it has a thin film of sugar around the outside that becomes crusty over time, giving the yokan some added crunch. Red bean paste comes in two varieties: koshi an, which mashes and smooths the baked red beans into a smooth consistency; and tsubu an, which processes the beans less and leaves them a little more chunky. Enjoy this yokan as a dessert or snack with a hot cup of green tea.
