Grilled skewers of chicken (yakitori) are hugely popular in Japan and it's not uncommon to see yakitori shops packed with businessmen after a hard days work grabbing a quick bite to eat and washing it all down with a nice cold beer. To make your own simply add bite sized pieces of chicken and your favourite vegetables (leeks and shiitake mushrooms work well) to skewers. Fry these in a frying pan or griddle until coloured on each side and then brush the yakitori sauce onto each side, and turn, brushing on more sauce each time. You can marinate the chicken prior to cooking for extra flavour, although this isn't necessary.For a more authentic taste, cook on the BBQ. Don't forget to soak the bamboo skewers prior to use to prevent them burning.
