Daiginjo is the highest sake grade, brewed from rice polished to 50% or less of its original size. This intensive milling removes more of the outer rice layers, producing the lightest, most fragrant and delicate sake style, traditionally brewed at low temperatures over a long fermentation. Our collection includes aged koshu and flower-yeast daiginjo styles, best served chilled.
