  • Non-fried noodles: dried, not fried, for a cleaner-tasting noodle.
  • Japanese wheat: the pack states 100% Japanese wheat flour.

How to Use

  • Classic bowl: dissolve the soup in hot water, add the drained noodles and top with spring onion.
  • Hakata-style toppings: add beni shoga (red pickled ginger), kikurage mushroom and sesame.
  • Load it up: finish with a soft-boiled egg, chashu or stir-fried greens.
  • Extra heat: a spoon of chilli oil or a pinch of ichimi lifts the rich soup.

Tonkotsu (豚骨) translates as pork bone, and tonkotsu ramen is the milky, rich style most associated with Fukuoka on Kyushu, where bones are boiled hard until the broth turns opaque. Fū (風) means style, so tonkotsu-fū describes a soup made to recreate that creamy character. Hakata-style bowls traditionally use thin, straight noodles, which is why the noodles here are fine and quick to cook.

What does tonkotsu-style ramen taste like?

Creamy, savoury and rounded, with the milky body tonkotsu is known for. It is richer and softer than a clear shoyu broth. The thin noodles carry the soup well and keep a light, firm bite if served straight away. Sharp toppings such as pickled ginger and spring onion cut through the richness.

What does tonkotsu-fu mean?

Tonkotsu means pork bone and describes the rich, milky ramen broth of Fukuoka. Fū means style. Tonkotsu-fū ramen is made to taste like that creamy tonkotsu style, so it gives the character of the dish in a quick, shelf-stable form. For a richer bowl, add your own toppings such as chashu, egg and pickled ginger.

How should I store it?

Keep the pack sealed in a cool, dry cupboard away from direct sunlight and strong smells. Once opened, use the noodles and soup promptly, and fold the pack closed if you only cook one serving. Cooked ramen is best eaten straight away, as the noodles soften as they sit in the soup.
