Kuki, Roasted Gold Sesame Seeds, 1kg
Roasted gold sesame from a Japanese sesame specialist, in a 1kg kitchen bag. Nuttier and richer than white.
Kuki Roasted Gold Sesame Seeds (金いりごま, kin iri goma) are golden sesame seeds, roasted to bring out a deep, nutty aroma, a rich, buttery flavour and a good crunch. They come from Kuki Sangyo, a sesame company in Yokkaichi, Mie Prefecture, that has worked with sesame since 1886. The 1kg bag is sized for restaurant use, for scattering, grinding and blending through service.
Why Chefs Choose This
- Gold, not white: golden sesame has a richer, rounder aroma than white sesame, and it shows once roasted.
- Already roasted: ready to use straight from the bag, with no toasting step on a busy shift.
- A sesame specialist: Kuki Sangyo has worked with sesame since 1886.
- Kitchen size: 1kg lowers the cost per portion for a garnish that goes on everything.
How to Use
- Sushi: roll the outside of uramaki in it, or scatter over nigiri and poke.
- Goma-ae: grind in a suribachi with soy and a little sugar, and toss through blanched spinach or green beans.
- Dressings and sauces: grind into goma dressing or a sesame dipping sauce for shabu-shabu.
- Finishing: over rice, noodles, salads, glazed meats and desserts.
Japan uses three main colours of sesame: white (shiro goma), black (kuro goma) and gold (kin goma, 金ごま). Gold is the least common and is prized for its aroma and richness. Kuki Sangyo was founded in 1886 in Yokkaichi, Mie Prefecture, when the business began pressing oil from sesame seeds with a machine brought over from England. It is best known in Japan for its sesame oils, and it still works with sesame today.
What is the difference between gold and white sesame?
Gold sesame has a golden seed coat and a stronger, nuttier, slightly sweeter aroma than white sesame, which is milder and cleaner. Once roasted, gold sesame smells richer and tastes more buttery, so it stands out more as a garnish and gives more flavour when ground into a dressing. Use it anywhere you would use white sesame when you want the sesame to be noticed.

Do I need to toast these seeds?
No, they are already roasted and ready to use. For the strongest aroma, warm a handful in a dry pan for a few seconds just before serving, or grind them fresh, since grinding releases the oils and the smell.
How should I store an opened bag?
Reseal it tightly and keep it somewhere cool and dry, out of the sun. Roasted seeds lose their aroma once exposed to air and warmth, so decant a working amount into a small airtight tub for the station and keep the main bag closed.
