Hakutsuru, Nigori Yuzushu, 700ml
Cloudy yuzu liqueur made with 100% Japanese yuzu and nothing artificial: bright, fragrant and a light 9.5%.
Hakutsuru's Nigori Yuzushu is built entirely around yuzu, Japan's most prized citrus. It uses 100% domestic Japanese yuzu, with no artificial flavours, colours or acidulants. Nigori means cloudy: the yuzu pulp is left in, which gives a hazy look and a fuller, fresher citrus character than a filtered liqueur. At 9.5% it is light and easy, at its best over ice or lengthened with soda.
Why Chefs Choose This
- 100% Japanese yuzu: real domestic yuzu rather than a synthetic citrus flavouring
- Nothing artificial: no artificial flavours, colours or acidulants
- Cloudy (nigori): the pulp is left in for a fuller, fresher, more textured citrus character
- Light and easy: a gentle 9.5%, bright and refreshing rather than heavy
How to Serve
- Over ice: the simplest serve, well chilled to keep it crisp
- With soda: top with soda water for a long yuzu highball
- In cocktails: a ready-made hit of real yuzu for spritzes and citrus cocktails
- Before pouring: roll the bottle gently to bring the settled pulp back through
Yuzu (柚子) is a knobbly Japanese citrus with an aroma somewhere between lemon, lime, mandarin and grapefruit, far too sharp to eat as fruit, so it is used for its juice and zest. Yuzushu (柚子酒) is the liqueur made from it, and a good one keeps that perfume. This is a nigori style, with the pulp suspended in the liqueur rather than filtered out. It is made by Hakutsuru (白鶴), the Nada, Kobe brewery founded in 1743.

What does yuzushu taste like?
Bright, fragrant and citrus-first, with yuzu's distinctive aromatic sharpness: more complex than lemon, with floral and mandarin notes. It is sweet but balanced by the fruit's natural tartness, and because the pulp is left in, it has a fuller, fresher mouthfeel than a clear citrus liqueur. At 9.5% it drinks easily, which makes it a versatile aperitif and a good base for long drinks rather than a heavy after-dinner sipper.

What is yuzu?
Yuzu is a Japanese citrus fruit, small and knobbly, with an aroma between lemon, lime, mandarin and grapefruit. It is prized in Japanese cooking for its fragrant juice and zest rather than its flesh, which is too sharp and seedy to eat. That complex perfume is what makes a liqueur made from real yuzu taste so much more interesting than a lemon or lime drink.
Why is it cloudy?
Because it is a nigori style, with the yuzu pulp left in rather than filtered out. The suspended fruit gives the hazy look and a fuller, fresher citrus character. The pulp settles over time, so give the bottle a gentle roll before pouring. The cloudiness is a sign of the fruit content, not a fault.
How should I store it?
Keep it cool and out of direct sunlight, and refrigerate once opened to keep the fresh citrus character at its best. Because it contains real fruit pulp, it is freshest drunk within a few weeks of opening. Stand it upright and roll it gently before each pour.
