Barrel-aged soy sauce from a family that has brewed it for eighteen generations, bottled under our own Kōmi name.

Kōmi Artisan Soy Sauce is a barrel-aged Japanese dark soy sauce, naturally fermented over time for a deep, complex umami, savoury richness and a mild sweetness. It is made for Kōmi by a family that has brewed soy in Japan for eighteen generations, still using traditional wooden-barrel fermentation. Kōmi is SushiSushi's own brand, and it only works with makers at that level. This is the 300ml bottle, for the table and the home kitchen.

Why Chefs Choose This

  • Barrel-aged: naturally fermented in traditional wooden barrels for depth of flavour
  • Four ingredients: water, soybeans, wheat and salt, and nothing else
  • Enhances, never overpowers: rich aroma and a smooth texture that season a dish without masking it
  • Two sizes: a 300ml bottle for the table, and a 1 litre for the kitchen

How to Use

  • Dipping: a small dish with sushi, sashimi or gyoza
  • Dressings: with rice vinegar and sesame oil for salads and cold noodles
  • Tare and glazes: equal parts with mirin and sake, reduced, for teriyaki or yakitori
  • Seasoning: nimono, noodle broths, fried rice and marinades

Soy sauce, shōyu (醤油) in Japanese, is brewed from soybeans, wheat, salt and kōji mould, then left to ferment and mature before pressing. This is koikuchi (濃口), the dark style that most Japanese kitchens mean when they simply say soy sauce. For centuries Japanese brewers fermented it in large wooden barrels, and a small number still do: the wood holds the microbes of the brewery from one batch to the next, which is part of why barrel-brewed soy is prized. Most of the soy sold in Japan today is made in steel tanks. Kōmi's maker is one of the families that kept the wooden barrels.

What does barrel-aged soy sauce taste like?

Soy sauce brewed slowly in wood tends to be rounder and more aromatic than fast, tank-brewed soy, with savoury depth that carries past the salt. Kōmi Artisan is deep and savoury with a mild sweetness and a smooth finish, so it works as well at the table as it does in the pan.

No. It is brewed with wheat. If you need a gluten-free option, see Kōmi Gluten-Free Tamari Soy Sauce.

How should I store soy sauce once opened?

Keep it in a cool, dry place, and in the fridge once opened, as the label directs. Keep the cap on and the bottle away from heat and sunlight, which darken soy sauce and dull its aroma over time.
