Gari (ガリ) is sushi-counter slang for pickled ginger, said to come from the gari-gari sound of it being sliced or crunched. The proper name is amazu-zuke shōga (甘酢漬け生姜): young ginger sliced thin and pickled in sweet vinegar. It is not a garnish. Sushi chefs serve it so diners can clear the palate between pieces, so that the taste of one fish does not carry into the next.
