Ibushi (燅し) means smoking. In Japanese craft it describes a smoked or smoke-darkened finish, the same word used for the silvery-grey smoked roof tiles seen on temples and traditional houses. On tableware it gives a dark, soft, slightly uneven tone. Mino ware (美濃焼) comes from the Tono area of Gifu Prefecture, around towns such as Tajimi and Toki, and is Japan's largest ceramic tableware tradition, with more than a thousand years of kiln history behind it.
What does ibushi mean?
Ibushi is the Japanese word for smoking or smouldering. Applied to ceramics and tiles, it refers to a darkened, smoky finish rather than a bright glaze. The result is a subdued charcoal tone that sets off food well, especially anything grilled or golden.

Will every dish be the same shade?
Expect small differences. Smoked finishes are naturally uneven, so some dishes will be a touch lighter or darker than others. The shape and size are the same, so they stack together.
Is it dishwasher and microwave safe?
We are waiting on the maker's care guidance and will add it here before the stock lands, so we are not going to guess. Until it arrives, hand washing in warm soapy water with a soft sponge is the safe choice for glazed Japanese tableware. Let it dry fully before stacking or putting it away.
