Toa, Japanese Wheat Dried Ramen Noodles, 180g

£2.99 £1.66 / 100g

Straight dried ramen noodles made with Japanese-grown wheat. Four minutes to the bowl.

These are chūka men (中華めん), Japanese ramen noodles, dried straight and packed in a 180g bag. The pack states 100% Japanese-grown wheat flour, no added colour and non-fried noodles, so they cook up firm and smooth rather than like an instant block. Boil for four minutes and drop them into your own broth. The soup is not included; this is noodles only.

Why Chefs Choose This

  • Proper bite: straight dried noodles that keep a firm, springy chew in hot broth.
  • Non-fried: clean and wheaty, without the oily taste of a fried instant block.
  • Fast and predictable: four minutes in boiling water, the same result every time.
  • Dry store staple: always ramen on hand, with none of the waste of fresh noodles.

How to Use

  • Shoyu or miso ramen: cook, drain and lift into hot broth with chashu, egg and spring onion.
  • Tsukemen: cook, rinse under cold water and serve with a concentrated dipping broth.
  • Hiyashi chūka: chill after cooking and top with ham, egg, cucumber and a soy and vinegar dressing.
  • Beyond ramen: stir-fry with vegetables and sauce, or toss through a noodle salad.

Chūka men (中華めん) literally means Chinese-style noodles, the name Japan gave to ramen noodles when the dish arrived from China. What sets them apart from udon and somen is kansui, an alkaline mineral water that gives ramen noodles their springy texture and faint savoury note. Hyōgo Prefecture, and the Banshu area in its south-west in particular, is one of Japan's best-known dried noodle regions, and this pack carries Hyōgo's mark as a recommended local speciality (兵庫県推奨優良特産品). Dried ramen noodles like these are what many Japanese households keep in the cupboard for a quick bowl at home.

What do dried ramen noodles taste like?

Clean and wheaty, with the gentle savoury note that kansui gives every ramen noodle. The texture is the point: a firm, springy chew when cooked to four minutes, softening a little as they sit in hot broth. Because they are straight and medium-fine, they carry a clear shoyu or shio broth well and pick up plenty of soup with each mouthful. Cook them a touch short if they will sit in broth for a while, and they keep their bite to the bottom of the bowl.

Pairs with: Marutomo Shoyu Ramen Soup Concentrate, Toa Dried Ramen Noodles (720g) and Toa Tonkotsu Ramen Noodles.

How do you cook dried ramen noodles?

Bring a large pan of water to a rolling boil, at least a litre per portion, and add the noodles. Stir in the first 30 seconds so they do not stick, then boil for four minutes. Drain well, shaking off as much water as you can so it does not dilute the broth, and lift straight into a hot bowl of soup. For cold dishes or tsukemen, rinse under cold running water after draining to firm them up and wash off surface starch.

Are these the same as instant ramen?

No. Instant ramen is usually fried in blocks and comes with a seasoning sachet. These are non-fried dried noodles with no soup, closer to what a ramen shop serves. They take a few minutes longer but taste cleaner and hold their texture better in broth. Pair them with your own stock or a ready-made ramen soup concentrate, and add toppings to suit.

How should I store dried ramen noodles?

Keep the pack sealed in a cool, dry cupboard away from sunlight and strong smells, as dried noodles pick up odours and moisture. Once opened, fold the bag tightly or move the noodles to an airtight container. Use within the date on the pack. Cooked noodles are best eaten straight away, as they soften quickly once they sit in broth.
