Taste of Hakutsuru — Sake Flight

Four sake from one brewery, so you can taste what the grade actually means.

Hakutsuru have been brewing in Nada since 1743, and they make sake at every level from the everyday one-cup to the competition daiginjo. That makes them the right brewery to learn on: hold the house style constant and the differences you taste are the grade, the rice and the polish, not the region.

Start with the Josen, which is what a Japanese household actually drinks. Move to the Excellent Junmai, brewed with rice and koji alone. Then the Yamada Nishiki Tokubetsu Junmai, made from the rice variety every brewer wants. Finish on the Superior Junmai Ginjo, where the aromatics arrive.
