Kono's Pure Akasu is a premium Japanese red vinegar, meticulously aged for three years to develop a rich, umami flavor with subtle sweetness and balanced acidity. Made from fermented sake lees, this traditional vinegar imparts a distinctive reddish-brown hue to sushi rice, a hallmark of authentic Edomae sushi craftsmanship.

How to Use

Warm gently with sugar and salt and fold through freshly cooked rice to make the deep amber shari used in Edomae-style sushi, where the vinegar's own colour and umami stand in for some of the sugar a lighter rice vinegar needs. It also makes a rounded, savoury base for dressings, marinades and simmered dishes wherever a more complex, aged vinegar is wanted.
