Fukubukuro: 福袋
In Japan, the fukubukuro (福袋) or lucky bag is a New Year tradition: shops sell sealed bags at a fixed price, and the contents are worth more than the price paid. Fuku (福) means good fortune and fukuro (袋) means bag. The Restaurant box applies the same rule to a professional kitchen, and a sensible one besides: stock that needs to move goes to a kitchen that will use it quickly, at a price that reflects the dates.
What sort of stock turns up?
Mostly the heavy-use end of the range: sushi and rice vinegars, mirin, ponzu, miso, koji seasonings, panko and sesame, often in several units of the same line so they are usable across a service. The mix follows what we hold most of that week, so boxes differ. Every short-dated or past best-before item is valued at its reduced website price.

Is it safe to use items past their best-before date?
Best-before is a date for quality, not safety. After it, a product may lose some flavour or texture but is not unsafe on that basis alone, provided it has been stored correctly and the packaging is intact. Use-by dates are different, and we never send anything past a use-by date.
Can I check what is in each product?
Yes. Every item arrives in its original retail packaging with its own full label, so check each label before use. Because the contents are a mystery, we cannot choose items around dietary needs, so this box is best for kitchens without restrictions.
Can I choose or swap items?
No. Each box is packed by hand at our Sheffield warehouse from the stock we most need to move, which is how we can guarantee the value. We cannot take requests, swaps or exclusions.
