S&B 1 Spice Ichimi Togarashi 300g

£6.99 £2.33 / 100g

Pure ground chilli in a 300g catering bag, for kitchens that season by the scoop.

Ichimi tōgarashi is single-chilli powder, red chilli and nothing else, so it adds heat without changing the flavour of a dish. S&B is one of Japan's best-known spice makers. This 300g bag refills table pots and keeps a busy line stocked.

Pairs with: S&B Shichimi Togarashi (15g), S&B Shichimi Togarashi (300g) and Maru Udon Noodles (200g).

Why Chefs Choose This

  • Clean heat: one spice only, so the chilli does not bring citrus or sesame notes with it.
  • Catering size: 300g refills table shakers and keeps the cost per portion down.
  • Consistent: a fine, even grind that seasons the same way every time.
  • Versatile: works in marinades, dips and sauces as well as at the table.

How to Use

  • Noodles: the classic table seasoning for udon, soba and ramen.
  • Yakitori and grills: dust over grilled chicken and pork, or mix into a spiced salt.
  • Sauces and dips: stir into ponzu, mayonnaise or a tare for controlled heat.
  • Beyond Japan: season fried chicken, roast vegetables or a chilli oil base.

Ichimi tōgarashi (一味唐辛子) translates as one-flavour chilli. Tōgarashi is the Japanese word for chilli pepper, and ichimi means a single taste, which sets it apart from shichimi, the seven-flavour blend of chilli with spices such as sansho, citrus peel and sesame. In Japan the two sit side by side on noodle-shop counters: ichimi for diners who want plain heat, shichimi for those who want fragrance too. This bag writes the name as 一味唐からし, spelling part of the word in kana.

What does ichimi togarashi taste like?

Straight chilli heat with a light, warm red-pepper aroma. With nothing blended in, the flavour is simple and clean, and the heat arrives quickly then fades rather than lingering. That makes it easy to control: it adds spice without pulling a dish towards citrus, sesame or the numbing tingle of sansho. In a sauce it also lends a little red colour.

What is the difference between ichimi and shichimi togarashi?

Ichimi is ground chilli on its own. Shichimi is a seven-part blend built on chilli with other spices and seeds added for aroma, such as sansho pepper, citrus peel and sesame. Ichimi gives a clean, direct heat; shichimi gives a gentler, more fragrant heat. Kitchens often stock both, ichimi for heat and shichimi for character.

How much ichimi should I use?

Start with a small pinch per bowl of noodles or portion of meat and build up, as it is hotter gram for gram than shichimi. In marinades and sauces, add it gradually and taste, since heat intensifies as a sauce reduces. For table use, decant into a small shaker so diners can season to their own level.

How should I store a 300g bag?

Fold the bag down tightly or decant into an airtight container and keep it in a cool, dry, dark place away from the stove. Steam and light make ground chilli clump and fade. Refill table shakers in small amounts so the main stock stays sealed, and use it while the colour is still bright.
