Yuzu (柚子) is Japan's most prized aromatic citrus. The fruit is small and full of pips, so it is grown for its fragrant rind and sharp juice rather than eaten fresh, and both go into Japanese sauces and dressings from ponzu to vinaigrettes. Wafu doresshingu (和風ドレッシング, Japanese-style dressing) is the everyday home of that flavour on the Japanese table. Saika (雑賀) is the name of the Kokonoe Saika house in Kinokawa, Wakayama, a prefecture known for its citrus growing.
Learn more: What is Yuzu?
What does yuzu dressing taste like?
Bright and sweet-sour. The first hit is yuzu fragrance, floral and somewhere between mandarin and grapefruit, followed by a clean acidity and a gentle sweetness that rounds it off. The peel adds a faint, pleasant bitterness that keeps it from tasting sugary. It is lighter than a sesame or creamy dressing, so it lifts delicate food rather than coating it. Shake well, as the peel settles at the bottom of the bottle and carries much of the flavour.

What is the difference between yuzu dressing and ponzu?
Ponzu is a citrus and soy sauce seasoning, thin and salty, used for dipping and dressing hot pots, gyoza and seafood. Yuzu dressing is a sweeter, rounder salad dressing made to be poured over leaves, tofu and cold dishes. Both use citrus for brightness; ponzu leans savoury and sharp, yuzu dressing leans fresh and sweet-sour.
Can I use yuzu dressing with non-Japanese food?
Yes. It works anywhere a citrus vinaigrette would: on a tomato and burrata salad, over grilled chicken or prawns, tossed through a grain salad or drizzled on roast vegetables. Its sweetness balances bitter leaves such as chicory and radicchio, and it makes a quick marinade for fish before grilling.
How should I store it after opening?
Keep the bottle in a cool, dark place before opening. Once opened, close the cap tightly, keep it in the fridge and follow the storage guidance on the label. Shake well before each use, as the yuzu peel settles to the bottom. For the brightest citrus flavour, use it within a few weeks of opening.
