Pairs with: Yamazaki Premium Sushi Rice, Shibanuma Classic Yuzu Ponzu and Yawataya Yuzu Togarashi.
Why Chefs Choose This
- Real yuzu peel: visible pieces of yuzu in the bottle, for aroma you can see.
- Ready to use: pre-seasoned, so it folds straight into warm rice.
- Point of difference: shari with a citrus lift that standard sushi vinegar does not give.
- Vinegar maker: from Kokonoe Saika, a vinegar producer in Wakayama.
How to Use
- Sushi rice (shari): fold into freshly cooked rice while still warm, using the ratio on the label.
- Chirashi and poke bowls: the yuzu fragrance lifts scattered sushi and rice bowls.
- Quick pickles: pour over sliced cucumber, radish or daikon for sunomono.
- Dressing base: blend with oil and soy for a yuzu vinaigrette, or splash over crudo.
Sushi vinegar (寿司酢, sushi-zu) is rice vinegar already seasoned with sugar and salt, the blend that turns plain cooked rice into shari, the lightly tangy, glossy rice that every piece of sushi sits on. Saika's Yuzu Sushi Meshizu (柚子寿司召し酢) takes that base and adds yuzu (柚子), the Japanese citrus prized for its peel rather than its juice, with a floral, perfumed aroma unlike lemon or lime. The maker, Kokonoe Saika (九重雑賀), is a vinegar producer in Kinokawa, Wakayama Prefecture.

What does yuzu sushi vinegar taste like?
The base is a clean, balanced sushi vinegar: mild acidity, gentle sweetness, not sharp. On top of that the yuzu adds a bright, floral citrus aroma, more perfumed than sharp, with a slight bitterness from the peel that adds complexity. It makes the rice itself aromatic rather than staying in the background. The yuzu is noticeable but not overpowering, so it complements fish rather than competing with it.

What is the difference between sushi vinegar and yuzu sushi vinegar?
Standard sushi vinegar (sushi-zu) is rice vinegar seasoned with sugar and salt; it seasons the rice but adds little aroma. Yuzu sushi vinegar adds yuzu citrus to that base, giving the finished shari a fragrant, floral lift. The difference shows most in simple preparations like nigiri and chirashi, where the rice is front and centre.
Can I use yuzu sushi vinegar for anything other than sushi rice?
Yes. It works as a quick pickle liquid for cucumber, radish and daikon: pour over sliced vegetables and refrigerate for an hour. It also makes a good base for vinaigrettes with a neutral oil and a splash of soy, or a finishing splash on ceviche or crudo.
How should I store yuzu sushi vinegar after opening?
Before opening, keep it in a cool, dark place. Once opened, keep it in the fridge to hold the citrus aroma and use it within the period given on the label. Shake gently before use to spread the yuzu pieces through the vinegar.
