Japanese yuzu, steeped into a junmai daiginjo base. Bright, citrusy and best served cold.

Sekai Itto's yuzushu starts with junmai daiginjo, the top grade of pure-rice sake, and infuses it with Japanese yuzu. The sake brings a refined, smooth base; the yuzu brings bright, zesty citrus. Serve it chilled on its own, over ice, or as a citrus lift in cocktails, and pair it with light, delicate dishes where the yuzu can shine. From Wakayama. 720ml.

柚子酒: yuzushu

Yuzushu (柚子酒) is a Japanese liqueur of yuzu, the fragrant citrus prized in Japanese cooking for its zest and juice. Junmai daiginjo (純米大吟醸) is sake made from rice, water, kōji and yeast alone, with the rice polished hard before brewing. Using it as the base gives this yuzushu its smooth, refined character. It comes from Wakayama.

How should yuzushu be served?

Cold. Chill the bottle and serve it on its own in a small glass, or over ice for a longer drink. Its bright citrus also makes it a good cocktail ingredient. Once opened, keep it in the fridge and finish it within a few weeks, while the yuzu aroma is at its freshest.
