Watanabe Hidama Green Infusion Spirit, 25%, 720ml
Shochu infused with tea leaves grown in the distillery's own town: a food-friendly spirit with a fresh, gentle tea edge.
Pre-order: arriving in the UK in early November 2026
Hidama Green (ヒダマ グリーン) is part of the Infusion range from Watanabe Shuzōjō (渡邊酒造場), a shochu distillery in Tano, Miyazaki Prefecture. Tea leaves grown in Tano are steeped in the distillery's shochu to draw out their umami and light astringency. The shochu stays the backbone of the drink, and the tea adds freshness and softness, so it drinks easily alongside food. 25% ABV, 720ml.
Why Chefs Choose This
- Local tea: the leaves come from Tano, the same town as the distillery.
- Made for the table: the tea is there to freshen the shochu, not dominate it, so it sits well with a meal.
- Serves every way: neat, on the rocks, with water, with soda or with hot water.
- A talking point: a Japanese tea-infused spirit is rare on a UK drinks list.
How to Serve
- On the rocks: over a large piece of ice.
- Mizuwari: with cold water, a classic way to drink shochu with food.
- Soda highball: tall, with chilled soda water.
- Oyuwari: with hot water in cold months, which lifts the tea aroma.
Shochu is Japan's native distilled spirit, and southern Kyushu, including Miyazaki, is its heartland. Watanabe Shuzōjō is based in Tano, near Miyakonojō, and its Infusion range steeps a flavouring ingredient in its own shochu after distilling. Hidama Green uses tea from the town around the distillery, tying the drink to its place.

Does it taste strongly of tea?
No. The shochu leads, and the tea brings a gentle freshness and a little umami and astringency in the background. It is designed to be easy to drink with food rather than to taste like a tea liqueur. Adding water or soda makes the tea note more noticeable.

How is Hidama Green different from Hidama?
Both come from Watanabe Shuzōjō's Infusion range. Hidama is barley shochu infused with hand-roasted barley, giving amber colour and roasted, chocolate-like notes. Hidama Green is infused with local tea leaves for a fresher, lighter, more food-friendly style.
What food does it go with?
It is designed as a drink for the dinner table. Try it with water or soda alongside sashimi, grilled fish, tempura, yakitori or simple vegetable dishes, where the tea note keeps each sip fresh.
