Taste of Japan: Tsuru miso

Tsuru miso is a miso company that was founded and established 140 years ago. Their factory is surrounded by lots of beautiful bountiful nature. Their most important policy in the production of miso is reduced down to just three words "simple, safe and tasty".

Their top-selling miso flavour originates from the Yanagawa prefecture (in Fukuoka) its a considerably sweet, white miso. 

Tsuru miso was created with the inspiration for producing a "healthy" miso. They use natural salt, less salt, no additives in their recipe, this miso lead them to become pioneers in their field because they were catering to a bigger market.

Since Fukuoka - Kyushu is known as a very famous rice/barley producing location in Japan, so mugi-koji (barley koii) is produced in this area as a base ingredient for Miso. They make many very interestingly flavoured miso that you can eat as it is and use it as more of a sauce than a base stock ingredient.  

Another famous product is their sesame miso, best used with most rice dishes, but also can complement a stir fry or dengaku tofu. Or you could really push the boat out and spread it on your toast!
