Mushrooms

Japan's most well-known mushroom is the shiitake. This flavoursome, slightly chewy mushroom is believed to have many beneficial health properties and contains significant quantities of vitamin B and D. Dried shiitake must be re-hydrated and some consider them to be richer in flavour than fresh shiitake. Nameko is another popular mushroom in Japan. It has an earthy, woody flavour and a pleasant silky texture. Nameko is also rich in vitamins. It is a standard ingredient in miso soup.
