Information

HAKUTSURU - Tenku Kimoto Junmai Daiginjo 720ml

It is a symbolic product of Hakutsuru, which is proud of its rich aroma, delicate and deep taste, brewed from the techniques and aspirations that have been handed down from generation to generation. "Hakutsuru Nishiki", which is Yamada Nishiki's brother sake rice, is highly polished and fermented at low temperature for a long time. The bag of unfiltered sake mash is hung at a very low temperature to bring out the fruity aroma of apples and pears, as well as the delicate and round taste of Hakutsuru Nishiki.

Hand-washing of the rice, limited water absorption, old-fashioned manual futa-koji method, and pure Junmai Daiginjo made from only Shizukushu that drips naturally without applying pressure. Tenku is seriously limited in quantity and each bottle comes with it's own serial number!

Tasting Notes: Balanced, fruity aroma and mellow flavour accentuated by placid trailing notes.

Perfect Food Pairings: Seafood salad, fresh spring roll, sautéed scallops.
