Binchotan / bincho sumi is a Japanese charcoal use mostly for giving yakitori it's unique char-grilled taste and for cooking unagi (Japanese eel). However, it can be used for all barbecues and a huge range of foods.
Binchotan is special as it does not release any unpleasant odours and produces less smoke while burning, preserving the taste and aroma of the food. It also burns at a lower but steady heat meaning it burns for much longer.
