Why Chefs Choose This

  • Complete kit: noodles and soup for two; you only add the toppings.
  • Non-fried noodles: cleaner flavour and a better bite than a fried instant block.
  • Four minutes: quick enough for a staff meal or a fast lunch.
  • Shoyu base: the classic clear soy broth that suits almost any topping.

How to Use

  • Classic bowl: top with spring onion, menma, nori, beansprouts and blanched greens.
  • Add protein: fried tofu, mushrooms or whatever you have to hand.
  • Finish with oil: a few drops of roasted sesame oil or la-yu just before serving.
  • Make it your own: add sweetcorn, or a spoon of chilli paste, for a richer bowl.

Shōyu rāmen (醤油ラーメン) is soy sauce ramen, the clear brown broth seasoned with shoyu that many people in Japan think of as the original ramen style. It took hold in Tokyo in the early twentieth century, served in Chinese-run noodle shops, and the old name shina soba is still heard. Ramen styles are named for what defines the broth: shoyu for soy sauce, shio for salt, miso for fermented soybean paste, and tonkotsu for a rich stock of long-boiled pork bones. Shoyu is the most versatile of the four, light enough for vegetables and delicate toppings, deep enough to carry roast pork.

What does shoyu ramen taste like?

Savoury and clean, with soy sauce leading: salty, rounded and gently sweet, with the roasted note that brewed shoyu brings. A shoyu broth is clear rather than creamy, so it tastes lighter than tonkotsu or miso ramen while still being satisfying. The noodles add a soft wheat flavour and a springy chew that carries the soup. Toppings shape the bowl: spring onion adds freshness, sesame oil adds aroma, and chilli oil adds heat.

Pairs with: Toa Tonkotsu Ramen Noodles, Kuki Classic Roast Sesame Oil and Kuki Premium La-Yu Chilli Oil.

How do you make the ramen from this pack?

Boil the noodles in plenty of water for four minutes. While they cook, make up the soup in each bowl with hot water, following the quantity printed on the pack. Drain the noodles well so they do not dilute the soup, add them to the bowls and top with whatever you have: spring onion, menma, nori, beansprouts, greens or sliced protein. One pack makes two bowls.

What is the difference between shoyu, shio, miso and tonkotsu ramen?

Shoyu, shio and miso describe how the broth is seasoned: with soy sauce, salt or miso. Tonkotsu describes the stock itself, a cloudy, rich broth made by boiling pork bones for hours. Shoyu is clear and savoury, shio lighter and more delicate, miso thicker and heartier, and tonkotsu creamy and rich. This pack is the shoyu style, the most versatile starting point and the easiest to build on with your own toppings.

How should I store it?

Keep the pack sealed in a cool, dry cupboard away from sunlight and use by the date on the pack. If you only cook one serving, fold the bag tightly, keep the remaining noodles and soup together, and use them soon. Cooked ramen is best eaten straight away, as the noodles keep softening while they sit in hot soup.
