Umeshu is made by steeping ume, the Japanese plum, in alcohol with sugar, and the fruit decides everything. Wakayama, historically Kishu, is the centre of Japan's ume growing, and its Nanko ume is the most prized variety. Nakata Foods, founded in Tanabe in 1897, makes all three of these bottles. Shiro means white, the clear classic style; aka means red; the yuzu version adds the juice of Wakayama yuzu, the aromatic Japanese citrus, and a touch of honey.
How do the three taste different?
The white is rich and rounded, sweet with the natural acidity of the ume to balance it. The red is brighter and lighter, with a brilliant red colour. The yuzu is the freshest of the three: fragrant, lemon-like citrus over the rounded sweetness of the plum.

How should I store it?
