Shokunin, Japanese Nori, B Grade, 50 Sheets

£22.99

Japanese-grown B grade nori, 50 full sheets. The working grade for rolls: strong, dark and it holds a seam.

This is the nori for the rolling station. B grade sheets are a touch thicker and sturdier than the top grades, so they wrap tightly, hold their seam under pressure and cut cleanly through a futomaki without tearing. The flavour is still clean, toasty and of the sea. Every sheet is Japanese: grown in the south of Japan and finished by Yamagataya, a nori house in Shizuoka. That matters in the UK, where most nori sold is grown in Korea or China. Fifty full-size sheets to a pack.

More from our Japanese nori range: A+ grade, 8 sheets, A grade, 50 sheets, Kōmi B grade, 8 sheets and nori powder. Keep sheets crisp in our nori storage tin.

Why Chefs Choose This

  • Holds under pressure: sturdy sheets keep their seam when rolled tight and do not split at the join
  • Cuts cleanly: a sharp, wet knife goes through a roll without dragging or tearing the nori
  • Japanese nori: grown in southern Japan and finished by Yamagataya in Shizuoka, not imported from elsewhere and relabelled
  • Kitchen quantity: 50 sheets keeps a sushi station going through a busy week

How to Use

  • Maki rolls: hosomaki, futomaki, uramaki and temaki
  • Gunkan: cut into strips to wrap the rice for gunkan-maki; the sturdier sheet holds its shape under the topping
  • Onigiri: wrap rice balls just before serving to keep the nori crisp
  • Garnish: cut into fine strips (kizami nori) over noodles, rice bowls and salads

Nori (海苔) has been part of Japanese food for well over a thousand years; the Taihō Code of 701 lists it among goods paid as tax. Today it is farmed on nets in shallow coastal bays through the winter, then chopped, formed into sheets, dried and toasted. Japanese nori is graded on colour, lustre, thickness, aroma and flavour. Higher grades are thinner, glossier and more delicate; B grade is stronger and more forgiving, which is why so many sushi kitchens roll with it. Yamagataya in Shizuoka finishes the nori for our Shokunin range, and everything we sell is Japanese.

Is B grade nori good quality?

Yes. Nori grades describe the character of the sheet, not whether it is fresh or well made. Top grades are thinner, glossier and more delicate, with a more pronounced aroma, and they suit hand rolls and omakase where the nori is tasted on its own. B grade is a little thicker and stronger, with a clean, toasty sea flavour, and it is the better sheet for rolls that need to hold together and be cut. For most maki, B grade is the right tool rather than a compromise.

What is the difference between A grade and B grade nori?

Delicacy against strength. A and A+ grade sheets are thinner, glossier and more aromatic, and suit hand rolls and omakase, where the nori is tasted on its own. B grade is sturdier: it holds a seam, survives a tight roll and cuts cleanly. Many kitchens keep both, using the higher grade for hand rolls and B grade for everything that gets rolled and cut.

Where is your nori from?

Japan, all of it. The nori is grown in the south of Japan and finished by Yamagataya, a nori house in Shizuoka. Most nori sold in the UK is grown in Korea or China, so Japanese nori is uncommon here. We only sell Japanese nori, across every grade in the range.

How do I keep nori crisp once opened?

Keep it away from air and moisture. Reseal the pack tightly or move the sheets to an airtight tin with a sachet of desiccant, and store somewhere cool and dry. Nori softens within hours in a humid kitchen. If a sheet goes limp, pass it briefly over a low gas flame or warm it in a dry pan for a few seconds to crisp it again.
