How to Use
- Dip: with cucumber, raw vegetables or blanched greens.
- Goma-ae style: toss through blanched spinach or green beans.
- Nabe and noodles: a spoonful in hot pot broth or over cold noodles.
- Beyond Japan: a glaze for grilled aubergine, chicken thighs or roast cauliflower.
Goma miso (ごま味噌) is sesame miso: roasted, ground sesame worked into sweetened miso. Sesame (goma, 胡麻) and miso are a classic pairing in the Japanese kitchen, and sesame is the base of dishes such as goma-ae, greens dressed in sesame, and of the dipping sauces served with shabu-shabu and hot pots. Grinding sesame releases its oil and turns its nuttiness into something rich and creamy; miso adds salt and depth. Tsurumiso (ツルみそ) prints since 1870 on the label.

What does sesame miso taste like?
Sweet and nutty first, from the roasted sesame, then the rounded savouriness of miso. It is smooth with a few flecks of sesame, thick enough to cling but loose enough to squeeze. The saltiness is gentle, much softer than plain miso, so it can be used as it is as a dip or dressing. Warmed through, the sesame aroma opens up, which makes it good on hot grilled vegetables and in nabe.

What is the difference between sesame miso and miso paste?
Plain miso paste is the fermented base: salty, thick and used to season soups and marinades. Sesame miso is miso that has been blended with roasted sesame and sweetened, so it is ready to use as a dip, dressing or glaze straight from the pouch. Do not swap it one for one in miso soup; it is a finishing sauce.
Can I use sesame miso with non-Japanese food?
Yes. It works anywhere a sweet, nutty, savoury glaze fits: brushed on grilled aubergine or chicken thighs, tossed through roast cauliflower or noodles, or thinned with a little rice vinegar as a salad dressing. It also makes a quick dip for crudités.
How should I store it after opening?
Close the cap tightly and keep the pouch in the fridge once opened. Wipe the spout after use so it does not dry out, and follow the storage guidance and best-before date on the pack.
