Magu Roll, 170 Sheets
Japanese tuna paper, 170 perforated 230 x 230mm sheets on a 40m roll: it soaks up drip without drying the fish out.
Magu Roll (まぐロール) takes its name from maguro, tuna. It is a freshness-keeping paper made for thawing frozen and fresh tuna: it draws off the drip as the fish thaws while holding enough moisture against the surface to stop it drying out, which helps keep the colour and flavour. The pulp paper sheds no dust and is perforated every 23cm, so you tear off a clean 230 x 230mm sheet each time. Fish counters also use it to wrap fish and meat in the fridge, drain fried food and wipe down boards.
Why Chefs Choose This
- Built for tuna: absorbs drip during thawing while keeping the surface from drying.
- Keeps colour: holds moisture and temperature steady so tuna keeps its colour for longer.
- No lint: clean pulp paper that does not leave fibres on fish.
- Easy to tear: perforated every 23cm for a neat 230 x 230mm sheet.
How to Use
- Thawing tuna: wrap frozen or fresh tuna blocks and thaw in the fridge.
- Storing fish and meat: wrap fillets and cuts to catch drip in the fridge.
- Fried food: drain tempura and karaage on a sheet.
- Clean-down: wipe boards and knives between fish.
In Japan this kind of paper is sold as hosenshi (保鮮紙), freshness-keeping paper, and it is a routine supply for fish shops, sushi counters and restaurant kitchens. Tuna is the reason it exists: a block of maguro loses quality fast if it sits in its own drip or if its surface dries out, and the colour of the flesh is one of the first things a customer judges. A good sheet balances the two, pulling liquid away while keeping the fish from drying. Magu Roll packs that job into a perforated roll for kitchens that go through it daily.

Why wrap tuna in paper?
To control the drip. As tuna thaws or rests in the fridge it releases liquid, and fish sitting in that liquid turns soft, dull and off-tasting at the surface. Leave it exposed instead and the surface dries and darkens. Wrapping it in an absorbent paper like this draws the drip away while keeping a little moisture against the flesh, so the surface stays fresh and the colour holds. Change the sheet when it becomes saturated, and the same principle works for any fish or meat resting in the fridge before service.

How do I use it to thaw tuna?
Take the tuna out of its packaging, wrap it in one or two sheets and put it on a tray in the fridge. The paper absorbs the drip as the fish thaws slowly. Replace the paper once it is saturated, and pat the surface before cutting. Slow thawing in the fridge, wrapped, gives better colour and texture than thawing at room temperature, where the outside warms long before the centre has softened. Once thawed, rewrap the block in a fresh sheet and keep it chilled until you cut it for service.
Is it only for tuna?
No. It was designed around tuna, but it works for any fish or meat that releases drip in the fridge: salmon sides, white fish fillets, scallops, beef or duck resting before service. It is also useful for draining tempura and other fried food, and as a lint-free wipe for boards, knives and trays during prep. Kitchens that buy it for the fish counter tend to find it ends up at every station, which is why it comes as a long perforated roll rather than loose sheets.
Is it the same as regular kitchen roll?
No. Standard kitchen roll is made to absorb as much as possible, which can pull too much moisture from the surface of raw fish and leave it dry and dull. Magu Roll is made to balance absorption with moisture retention, and to shed no dust or fibres onto the flesh, which is why fish shops and sushi counters use it for raw fish. Ordinary kitchen roll also tends to tear and stick when wet, while these sheets hold together when wrapped around a block of tuna overnight.
