Mizkan have been producing vinegar for over 200 years. They started making kasuzu, a type of vinegar made form the by-product of sake. They produced the vinegar from inside of the sake brewery, which was unheard of at the time as the process could potentially contaminate the sake. However, Mizkan was successful in their endeavours and revolutionised the vinegar brewing process. They continue to make products for seasoning food and produce products that are good for the body.
