Spicy Shrimp Soba Noodles

If you're looking for a noodle dish which is perfect for summer, then you've found it. This simple soba noodle dish is bursting with fresh flavours and subtle chilli heat, and the shrimp makes it incredibly moreish! We love this dish, and as always you can change the meat to suit you, or substitute for tofu or veggies. Just make sure you adjust the cooking time to suit!

Here's what you will need:

  • 350g of Soba Noodles
  • 280g Edamame Beans
  • 1/2 Red Pepper
  • 1 Minced Garlic Clove
  • 1cm Minced Ginger
  • 1 Tbsp Hot Chilli Sauce
  • Juice of 1 Lime
  • 1/2 Pound Fresh Shrimp/Prawns
  • 1 Cup Chopped Spring Onions
  • Olive Oil
  • Soy Sauce

Instructions

In a bowl, combine the chilli sauce, garlic, ginger, and lime, then place the shrimp in the mixture to marinated for an hour. Ensure everything is covered in the flavours.

Cook the soba noodles in a large pan and cook per packet instructions. In the final two minutes of cooking, add the edamame beans. Drain and rinse with cold water.

Heat olive oil and fry the pepper lightly, then add half of the spring onions. Saute for 3 mins.

Add the shrimp, you should only need to cook on each side for 1.5 minutes. Season with soy sauce to your taste. 

Add the soba and edamame to the frying pan, and cook for long enough to absorb all the marinade flavours. You can add leftover marinade if you'd like the noodles a little more intensely flavoured. 

Finish with a sprinkling of fresh spring onions!

Serving

If you're serving this dish for a dinner party, you could serve a side dish of a dressed cucumber salad with soy, rice wine vinegar and sesame seeds. We also recommend serving it with a cold glass of sapporo beer!
