Bizen Maboroshi Junmai Ginjo is made from carefully selected high-quality rice and water. The sake production process involves several steps, including rice milling (polishing), washing, soaking, steaming, fermentation, and pressing. Junmai Ginjo sake has a rice-polishing ratio of at least 60%, which means that at least 40% of the outer layer of the rice grain has been removed.
